Crunchy Apple + Cranberry Salad With Feta

Crisp, tangy, and just a little bit fancy for a weekday lunch. This apple and cranberry salad with feta comes together in about 15 minutes and hits every note. It's sweet, salty, crunchy, and fresh.

Ingredients
  

For the Salad
  • 2 large handfuls of mixed greens or arugula
  • 1 large crisp apple (Honeycrisp or Granny Smith work best) thinly sliced
  • 1/3 cup dried cranberries
  • 1/3 cup crumbled feta
  • 1/4 cup candied or toasted walnuts
  • 2 tbsp red onion thinly sliced
For the Dressing
  • 3 tbsp olive oil
  • 1 1/2 tbsp apple cider vinegar
  • 1 tsp honey
  • 1 tsp dijon mustard
  • salt and pepper to taste

Method
 

  1. If toasting walnuts, add them to a dry pan over medium heat for 3 to 4 minutes, tossing occasionally until golden and fragrant. Set aside to cool.
  2. Thinly slice the apple just before assembling, this prevents browning. A mandoline works perfectly here if you have one.
  3. Whisk together all dressing ingredients in a small bowl or jar until well combined. Taste and adjust seasoning.
  4. Add the mixed greens to a large bowl and drizzle with about half the dressing. Toss gently to coat.
  5. Arrange the apple slices, cranberries, red onion, and walnuts over the greens.
  6. Crumble the feta generously over the top.
  7. Drizzle with remaining dressing and serve immediately.

Notes

The dressing makes a little more than you'll need. You can store the extra in a jar in the fridge for up to a week.
